Quick and Easy Spaghetti with Cod Ragu
Spaghetti with Cod Ragu
This is a really easy pasta dish but packs a real flavour!
Serves 4 people
1 red onion finely diced
200g of fresh cherry tomatoes cubed
1 bottle of passta
Fresh of Frozen (defrosted) Cod Fillet Cut in 200g
Add the finely diced red onion to a sauce pan with a splash of olive oil.
Cook until the onion is soft translucent but not coloured.
Add in the cubed tomatoes and cook until they start to breakdown.
Add the passata and cook for about 15 minutes over a low heat season to taste.
Add the Cod and poach in the tomato sauce.
To salted boiling water add the pasta and cook until it is al dente.
To serve add some of the sauce to the pasta keeping the fish back and mix to coat all the pasta. Lastly add the Cod onto the top of the pasta and drizzle some good quality Extra Virgin Olive Oil.
