What does Bronze Drawn and Slow Dried mean?
When pasta is made it is extruded through a die which gives the pasta its shape. When the pasta is Bronze Drawn it does through a Bronze Die, which gives it a rough texture that really holds the sauce well. Slow Dried means that the pasta has been dried for a long time, depending on the shape this could be 48-72 hours. This makes the pasta much lighter than mass produced pasta which is blasted with heat to dry it very quickly and then cooled equally quickly making it harder to digest, leaving you feeling bloated...
