There are many legends to the name Strozzapreti which translated means "priest choker" pasta. The one that I hope is true is that on Sundays after the service it was common for priests to eat with the parishioners. If a priest would like the cooking then they would come back week after week. To let a priest know that they had outstayed their welcome they would serve Stozzapreti to give the priest a sign!
